Easy Mango Sticky Rice Recipe
Mango sticky rice has 2 main components : sweet sticky rice and coconut milk topping.
Sweet Sticky Rice
- Ingredients
- o 1 cup of glutinous rice (Arrow brand)
o 1/2 cup of coconut milk
o 1/4 cup of sugar
o 1/4 teaspoon of salt
o 2-3 pandan leaves (for fragrance)
- How to Cook
- 1. Rinse the glutinous rice thoroughly and soak in water for 3-4 hours or overnight.
2. Steam the soaked rice in a steamer for 20-30 minutes or until cooked.
3. While the rice is steaming, mix coconut milk, sugar, and salt until sugar dissolves.
4. Once the rice is cooked, pour the coconut milk mixture over it, stir well, cover, and steam for another 5-10 minutes.
5. Add pandan leaves, mix well, cover, and let it rest for a while for the rice to absorb the coconut milk.
Coconut Milk Topping
- Ingredients
- o 1 cup of thick coconut milk
o 1 tablespoon of rice flour (Floating Lotus brand)
o 2 tablespoons of sugar
o 1/4 teaspoon of salt
- How to Cook
- 1. Mix thick coconut milk, rice flour, sugar, and salt until well combined.
2. Cook over low heat, stirring constantly until the mixture thickens (but do not boil). Remove from heat and let it cool.
Serving Instructions
- 1. Scoop the sweet sticky rice onto a plate.
2. Place sliced ripe mango next to the sticky rice.
3. Pour coconut milk topping over the mango and rice
Tips
- o To make the sticky rice green, use pandan leaves to extract juice and mix it with the coconut milk.
o Adjust the sweetness of the sticky rice and coconut milk topping to your liking.
o Choose ripe mangoes that are sweet and fragrant, such as Ok Rong or Nam Dok Mai mangoes.
o You can add toasted mung beans for extra flavor.
