Khanom Tan (Thai Steamed Toddy Palm Cake) Recipe

Ingredients
- Dry Ingredients
- o 250 grams of rice flour (Floating Lotus brand)
o 1 tablespoon of baking powder
o 1/2 teaspoon of salt
- Wet Ingredients
- o 200 grams ripe toddy palm flesh
o 320 ml coconut milk
o 200 grams sugar (or adjust to taste)
Topping
- o Grated coconut meat, as desired
Instructions
- 1. Prepare the Toddy Palm Flesh : If using fresh toddy palm fruit, wash it thoroughly, cut into small pieces, and blend or mash until smooth. If using canned toddy palm, drain it well.
- 2. Combine the Wet Ingredients : In a mixing bowl, pour in the coconut milk, followed by the sugar. Stir until the sugar dissolves completely. Add the prepared toddy palm flesh and mix well.
- 3. Combine the Dry Ingredients : Sift the rice flour, baking powder, and salt together. Gradually add the dry ingredients to the wet ingredients, stirring until well combined and smooth.
- 4. Rest the Batter : Cover the bowl with plastic wrap and let the batter rest for about 10 minutes to allow it to set.
- 5. Prepare for Steaming : Boil water in a steamer. Lightly grease the molds or cups.
- 6. Steam the Cakes : Spoon the batter into the molds or cups, filling them about 3/4 full. Sprinkle with grated coconut. Steam in the steamer for about 15-20 minutes, or until cooked through.
- 7. Check for Doneness : Insert a toothpick into the center of a cake. If it comes out clean, the cake is done.
- 8. Cool and Serve : Remove the cakes from the steamer and let them cool slightly before serving.
Tips
- o For a more fragrant flavor, you can add a little synthetic jasmine flavoring to the batter.
o If you want a darker yellow color, you can add a little yellow food coloring.
o If you prefer a less sweet dessert, you can reduce the amount of sugar.
